Artichoke and Lemon Fritters Recipe

A delectable artichoke starter or side dish

Artichokes are coated in a light batter, deep fried and served with lemon. Can be served as a side-dish or as a starter


4 medium artichokes
1 tbsp lemon juice
1 tsp baking powder
1/2 tsp salt
1 cup plain flour
2 large egg whites
1/2 cup water
1/2 cup club soda
Vegetable oil for frying
4 lemon wedges

Recipe Instructions

Prepare and cook the artichokes.
Trim the artichokes and wash well. Bring a large pot of water to the boil and add salt and lemon juice. Add the artichokes and simmer, with the lid off, for 30-40 minutes. Check that the stem ends of the artichokes are soft, with a sharp knife, before removing with a slotted spoon. Drain on kitchen roll.

Prepare the batter
Mix the baking powder, salt and flour in a large bowl. Whisk the egg whites and water in another bowl until light and frothy and add to the flour mixture. While stirring add the club soda and continue to stir until ingredients are well mixed.

Cut the artichokes length-wise into quarters and remove the chokes with a metal spoon. Half each quarter length-wise so there are now 8 long pieces per artichoke. Dip a few at a time into the batter and coat well. Fry in deep vegetable fat heated to 375 degrees F. Drain on kitchen roll.

Serve immediately with the lemon wedges
