Artichoke and Mushroom Casserole Recipe

Greek recipe that is suitable for vegans

Frozen artichokes baked with mushrooms and herbs. Suitable to be served as a vegan main-course dish.

Ingredients

9 oz artichoke hearts
1/2 cup onion, finely chopped
3 cups sliced mushrooms
1 tsp olive oil
2 cloves garlic, finely chopped
1/2 tsp dried oregano
1 tsp dried basil
1 tbsp dry white wine
1 tbsp lemon juice
1 tbsp Italian seasoned bread crumbs
salt
freshly milled black pepper

Recipe Instructions

Cook
Preheat oven to 350oF. Cook frozen artichokes according to packet instructions. Heat oil in a medium non-stick saucepan, add onion and garlic and fry for 3 minutes, stirring frequently. Add the mushrooms, lemon juice and white wine. Put in herbs and cook for a further 3 minutes again stirring frequently Remove from the heat and stir in the bread crumbs.

Bake
Put artichokes in a greased oven-proof dish and cover with the mushroom mixture. Bake for 30 minutes uncovered.
