Artichoke and Potatoes with Dill Recipe

A delicious Greek-style artichoke recipe

Greek style artichokes and potatoes served with cill. Can be served as a side-dish or a vegetarian main-course


5-6 cooked artichoke hearts
1 onion, chopped
5-6 small new potatoes
3 carrots
1/4 cup olive oil
4 spring onions, chopped
2-3 cups stock or water
1/4 cup lemon juice
1 tbsp flour or cornstarch
3 tbsp fresh chopped dill
freshly milled black pepper

Recipe Instructions

Cook the vegetables
In a large saucepan put in the oil and saute the onions until translucent. Add the spring onions and saute for a further 2 minutes. Chop the potatoes into four and chop the carrots into chunks. Add into the frying pan along with the artichokes hearts. Season to taste and add the stock or water. Bring to the boil and reduce to a simmer, cover and cook for 20-30 minutes until vegetables are soft. Remove the vegetables to a bowl.

Finish the sauce
Add the flour or cornstarch to the lemon juice and whisk. Add to the stock/water mixture and keep stirring until the sauce is thickened. Stir in the chopped dill.
