Artichoke and Tomato Soup Recipe

A soup recipe with a tasty combo of artichoke and tomato

Creamy artichoke and tomato soup cooked with milk and cream. Flavoured with basil and oregano.


6 artichoke hearts
4 tomatoes, peeled and chopped finely
1 cup chicken stock
2 cups milk
1 cup double cream
1 cup butter
1/2 cup flour
1/2 large onion
1 tbsp basil
3/4 tsp oregano
salt and white pepper

Recipe Instructions

Cook artichokes
Cut artichoke hearts into quarters. Put tomatoes, artichoke hearts, milk, chicken stock and cream in a large saucepan. Cook over a medium heat, stirring occasionally.

Make Roux
Saute onions in butter with basil, oregano, salt and pepper. Add flour and cook for a few minutes stirring well.

Cook soup
Add onion roux slowly to artichoke mixture, stirring well. Continue cooking on a low heat until soup has thickened.

Serve hot in bowls.
