Artichoke Hearts and Peas Recipe

Simple recipe to accompany roasts or grills

Artichokes cooked with onion, peas and tomatoes and flavoured with dill. Can be served as a starter or a side-dish.

Ingredients

3/4 lb frozen artichoke hearts, defrosted
juice of 1-2 lemons
3 large onions
1 3/4 lb frozen peas
2 ripe medium tomatoes
1 bunch fresh dill
1 cup water
3/4 cup olive oil
1/2 tsp pepper
1 1/2 tsp salt

Recipe Instructions

Preparation
Finely chop the onions and tomatoes and dill.

Cook
Add the olive oil to a large saucepan and saute the onion and dill until the onions are soft. Add the chopped tomatoes and cook for 8-10 minutes. Add the artichoke hearts, peas, water and salt and pepper to taste. Bring to the boil, put the lid on, and reduce to a simmer. Cook for 30 minutes. Turn off the heat and add lemon juice. Shake the pan to mix ingredients. Do not stir. Leave for 10 minutes.
