Artichoke Stuffing Recipe

A delicious recipe suitable to serve with a roast meal
Yield: 18    Preparation Time: 30 mins    Cooking Time: 40 - 45 mins
Artichoke stuffing recipe with mushrooms, celery and parmesan cheese. Can be served as a side-dish with meat.


2 6 1/2 oz jars marinated artichoke hearts
1/2 lb fresh mushrooms
1 medium onion
2 celery sticks
3-4 garlic cloves
1/2 cup grated parmesan cheese
1 egg
1 14 oz can chicken broth
1 tsp chicken stock cube
1 loaf sourdough bread

Recipe Instructions

Cut the sourdough bread into chunks and put in a large baking tray. Bake in an oven for 15 minutes at 350oF until golden brown. Slice mushrooms, finely chop the onions and celery and crush the garlic.

Cook vegetables
Put the butter in a large saucepan and saute the mushrooms, celery, onion and garlic until tender.

Prepare and cook dish
Put in a large bowl and stir in the artichoke hearts, cheese and chicken stock cube. Once mixed well add the bread cubes. In a small bowl add egg and chicken broth and whisk. Pour over the bread mixture and mix well. Grease a 3 qt baking dish and add mixture. Cover and cook for 30 minutes at 350oF. Uncover and bake for 10-15 minutes.
