Artichokes Cooked in Cider Recipe

A delectable artichoke starter recipe

Artichokes cooked in cider and finished with a butter and herb sauce. Can be served as a starter or side-dish.


20 prepared artichokes
1 litre sweet cider
50 ml oil
100 g onion
25 ml lemon juice
50 g butter
5 g chervil
5 g tarragon
5 g chives
5 g finely chopped parsley

Recipe Instructions

Prepare the artichokes
Blanch the prepared artichokes. Drain and cut into quarters.

Cook the artichokes
Chop the onion. Heat the oil in a saucepan, add the onion and sweat. In an earthenware dish add the artichokes, the cider and the onions, cover with a lid and cook for 20 minutes at 200oC. Remove the artichokes.

Prepare the sauce
Simmer the remaining liquid until reduced by half, add the lemon juice and continue to reduce until syrupy. Add the chopped chervil, tarragon, chives and parsley and the butter and stir well.

Serve the artichokes with the sauce poured over.
