Cordoba Artichokes Recipe

A traditional Spanish recipe for a vegetable accompaniment

Artichokes cooked with potatoes and saffron. Traditional Spanish dish served as a side-dish.

Ingredients

12 artichokes
500 g new potatoes
few threads saffron
1 cloves garlic
1 tbsp vinegar
1 tbsp flour
100 ml water or stock

Recipe Instructions

Preparation
Cut the outer tough leaves of the artichokes and place in a bowl of water. Wash the new potatoes. Combine the saffron with the garlic, crushed, until a paste. Add to a mixture of the vinegar and water and mix.

Cook
Drain the artichokes and in a saucepan heat the oil. Add the artichokes and the potatoes and saute for 5 minutes. Add the flour, cook for 2-3 minutes, then add the saffron liquid mix. Cover and simmer until the artichokes and potatoes are tender.
