juice of 1 lemon
1 3/4 pint (1 litre) oil
salt and freshly milled black pepper
Prepare the artichokes
Add the lemon to a bowl of water. Trim the artichokes, and cut off the stems, the chokes and any tough outer leaves. Put prepared artichokes immediately into the lemony water to prevent discolouration. Remove, drain on kitchen roll and pat dry.
Flatten each artichoke with the heel of your hand, by pressing down on the centre.
Heat the oil to 150oC (300oF) in a deep frying pan. Put the artichokes in the pan, reduce the heat slightly and cook for 5 minutes. Turn over and cook for a further 2 minutes. Drain on kitchen roll.
Serve immediately with salt and pepper.
