Roast Beef and Artichoke Salad Recipe

Roast Beef and artichoke salad with radicchio and mozzarella. Served as a main course salad with an orange and balsamic dressing.

Ingredients

1-2 artichokes in olive oil
50-75 g thinly sliced rare roast beef
1 small tomato
2-3 mini mozzarella balls
1 portion radicchio salad
2 tsp olive oil
juice of half orange
1 tsp Balsamic vinegar
1 tsp basil pesto
salt
freshly milled black pepper
chopped chives

Recipe Instructions

Prepare the dressing
Mix pesto, orange juice, balsamic vinegar, olive oil and salt and pepper to taste.

Prepare the salad
Chop the radicchio, drain the artichokes and cut into quarters. Cut the mozzarella balls the tomato into halves. Put the radicchio leaves in a salad bowl and add the artichokes, mozzarella, roast beef and the tomato halves.

Serve
Sprinkle with the dressing and the chopped chives. Serve the crusty bread.
