Simple Artichoke Hummus Recipe

A North African recipe using tinned artichokes

A smooth creamy North African hummus made with tinned artichokes and parmesan cheese. Can be served as a snack, a canapé, or a side-dish.

Ingredients

1 15 oz can artichoke hearts
2 garlic cloves
1/2 cup grated parmesan cheese
1 lemon
1 cup flat-leaf parsley
1/2 cup extra-virgin olive oil
Small crostini (optional)

Recipe Instructions

Preparation
Drain and rinse the can of artichoke hearts. Very coarsely chop garlic gloves and parsley. Zest the lemon.

Blend
Put the prepared ingredients plus the parmesan cheese and extra virgin olive-oil into a blender. Blend until smooth and creamy

Serve
Serve with crostini toasts.
