1 14 oz can artichoke hearts
1/4 cup chopped prosciutto or Serrano ham
1 tbsp olive oil
1/8 tsp freshly ground black pepper
Drain and rinse artichoke hearts. Cut into halves.
Heat oil in a medium saucepan. Add artichoke hearts and prosciutto or Serrano ham, coat thoroughly with oil and continue to cook over a medium heat for 8 – 10 minutes stirring frequently. Artichoke hearts should be golden brown. Stir in freshly ground black pepper.
Serve hot, sprinkled with chopped parsley.
