Stuffed Artichokes Italiano Recipe

A basic recipe for a classic Italian favourite

Artichokes steamed with a bread-crumb and parmesan cheese stuffing. Can be served as a starter or vegetable side-dish.


3 artichokes
Lemon juice
1 clove garlic
1 cup Italian bread-crumbs
5 oz grated Parmesan cheese
1/4 cup extra virgin olive oil

Recipe Instructions

Prepare the artichokes
Cut the stems of the artichokes. Cut the tops off the leaves. Crush the garlic. Mix in a bowl the cheese, garlic and bread-crumbs. Stuff the mixture between the leaves of the artichokes.

Cook the artichokes
Put 1-2 inches of water in a saucepan. Put the artichokes in the pan. Drizzle lemon juice and olive oil over the artichokes, cover, bring to the boil and reduce to a simmer for 45 minutes. Check occasionally that the water has not evaporated. The artichokes are cooked when the leaves can easily be removed.
